- 2 lb. potatoes, grated into bowl of cold water
- 1 small onion, finely chopped
- 2 eggs
- 3 Tbsp. flour
- 1/2 tsp. salt or less
- 1/2 tsp. baking powder
- 1/4 tsp. pepper or less
- vegetable oil for frying
Directions

1Drain and squeeze grated potato.

2Combine all ingredients in large bowl, except oil.

3Over medium heat, put 1/8-inch oil in large skillet.

4Pour 1 cup potato mix in pan.

5Flatten slightly. Cook on both sides until crisp and brown (about 8 minutes).
