- 2 eggs, beaten
- 1/2 tsp. salt
- 2 Tbsp. flour or Matso meal
- 1 small onion
- 1/4 tsp. baking powder
Directions

1Preheat oven to 475°.

2Peel or scrub potatoes and cut into long strips about 1/2-inch wide.

3Dry strips thoroughly on paper towels.

4Toss in a bowl with oil as if making a salad.
