- 3 eggs
- 1/2 lb. potatoes, boiled
- 1 oz. butter
- a little chopped parsley
- salt and pepper
Directions

1Beat the eggs thoroughly and stir in the parsley.

2Cut potatoes into small pieces and add to eggs.

3Melt the butter in a skillet and when just beginning to smoke faintly, pour in the omelette mixture.

4Cook over a moderate heat, until golden brown. Fold over and serve on a very hot plate.
