Potato Pancake

- 4 medium size potatoes, shredded
- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 1 tsp. season salt
- 1/4 tsp. pepper
Directions

1Put 1 tablespoon oil and 1 tablespoon butter in a large skillet.

2Set over medium heat until butter melts.

3Put potatoes in the skillet.

4Press them down into an even compact layer. Cook, covered, for 5 minutes.

5Uncover, turn heat to low and cook for 15 minutes more.

6Slide the pancake onto a plate.

7Put 1 tablespoon oil and 1 tablespoon butter into the skillet.

8When the butter melts, put the pancake back into the skillet with the browned side up.

9Press down to compact the potatoes and cook, uncovered, for 15 minutes more. Cut into 4 wedges and serve warm.
