- 2 large potatoes, peeled
- 2 small onions, peeled
- 2 eggs
- 2 to 4 Tbsp. milk
- 2 Tbsp. butter, melted
- 1/4 c. flour
- 1/2 tsp. salt
- pepper to taste
Directions

1Shred potatoes and onions.

2Add eggs, milk and melted butter. Mix.

3Add flour, salt and pepper.

4Pour batter (about 1/4 cup at a time)

5on a hot greased griddle.

6Spread to make about a 4-inch pancake.

7Brown on each side.

8Lay on a paper napkin while making the rest.

9Makes 8 to 10 pancakes.
