- 3 c. well-drained, shredded, raw potatoes (4 medium)
- 1/4 c. grated onion
- 3 Tbsp. flour
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 eggs, slightly beaten
- 3 Tbsp. butter
Directions

1Combine potatoes, onion, flour, salt, pepper and eggs; mix. Heat a small amount of butter in skillet over moderate heat. Spoon 1/4 cup potato mixture into skillet for each pancake.

2Spread carefully to make a 3-inch cake.

3Cook until brown on both sides, turning once, 8 to 10 minutes.

4Yields 12 pancakes.
