- 2 eggs
- 1 c. mashed potatoes
- 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- oil (for deep fat frying)
Directions

1In a mixing bowl, beat eggs.

2Add potatoes.

3Combine flour, baking powder and salt; stir into potato mixture.

4In large saucepan or kettle, heat about 1-inch of oil to 375°.

5Drop by heaping teaspoonfuls, 4 or 5 at a time, into hot oil.

6Fry 2 to 3 minutes, turning once, or until golden brown.

7Watch closely, since they brown quickly.

8Drain on paper towels.

9Serve immediately.
