Ingredients
- 4 1/2 to 5 c. flour
- 1/2 c. mashed cooked potatoes
- 3 Tbsp. sugar
- 2 pkg. RapidRise yeast
- 1 1/2 tsp. salt
- 1 1/4 c. water (reserved from boiling potatoes)
- 3 Tbsp. butter or margarine
Directions

1Combine 2 cups flour, potatoes, sugar, yeast and salt in large bowl.

2Heat water and butter until very warm (125° to 130°); stir into yeast mixture.

3Stir in enough remaining flour to make soft dough; knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes.

4Cover; let rest 10 minutes.

5Divide dough into 16 equal pieces; form into balls.

6Place in 2 greased 8 or 9-inch round cake pans (or can be placed in one 13 x 9 x 2-inch cake pan).

7Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes.

8Sprinkle 1 tablespoon flour on rolls, if desired.

9Bake in a 400° oven for 20 minutes, or until golden brown.

10Remove from pans; cool on wire racks. Yields 16 rolls.
