Ingredients

  • 3 c. potatoes, diced or cubed and cooked
  • 2 hard-boiled eggs
  • 1/2 c. chopped celery
  • 1/2 c. diced onions
  • 1/4 c. sweet relish
  • salt and pepper to taste
  • 1 c. mayonnaise
  • 1 tsp. mustard

Directions

    Cover potatoes with water; bring to boil.

    Lower flame and simmer until tender.

    Drain, peel and cut potatoes into bite size pieces.

    Mix onions, celery, eggs and sweet relish with mayonnaise and mustard.

    Stir in the potatoes.

    Add salt and pepper to taste. Cover bowl and refrigerate for 2 hours.

    Serves 4 persons.
