Potato Salad

Ingredients

  • 4 c. cooked potatoes
  • 2 Tbsp. salad oil
  • 2 Tbsp. good vinegar
  • 1/4 c. vinegar drained from pickles
  • 1/2 tsp. dried dill weed
  • 1 Tbsp. finely chopped onion
  • 1/4 c. mayonnaise
  • 1 small clove garlic, crushed
  • 2 green onions
  • 3 radishes
  • 3 hard-cooked eggs
  • 2 Tbsp. minced parsley
  • 1/4 tsp. paprika
  • salt to taste

Directions

    Combine potatoes (either hot or cold) with oil, vinegar, pickle liquid, dill, onion and garlic.

    Set aside to marinate for several hours in the refrigerator.

    Chop green onions fine; slice radishes thin.

    Quarter hard-cooked eggs.

    Add to potatoes with remaining ingredients; mix lightly.
