- 3/4 c. chopped onion
- 1 1/2 Tbsp. margarine
- 1 1/2 Tbsp. flour
- 3/4 tsp. salt and pepper
- dash of paprika
- 1 c. milk
- 1/2 c. grated Cheddar cheese
- 2 1/2 c. potatoes
Directions

1Saute onion in butter 5 minutes.

2Stir in flour and seasoning. Cook over low heat until smooth.

3Remove from heat.

4Gradually stir in milk.

5Heat, stirring constantly until sauce is thickened. Add cheese.

6Mix well.

7Layer 1/2 of potatoes in greased casserole.

8Cover with 1/2 of cheese sauce.

9Repeat potato and cheese sauce.

10Bake 1 hour, covered, then uncover and bake an additional 15 to 30 minutes until golden brown on 350°.
