  • 5 None potatoes, scrubbed, cut into wedges
  • 1/4 cup oil
  • 1 oz Cheddar cheese, grated
  • None None Salsa
  • 1 None avocado, finely chopped
  • 2 oz roasted red peppers, drained, finely chopped
  • 1 None spring onion, finely sliced
  • 1 None lime, juiced
  • 1 1/4 cups sour cream, to serve
  • 1/4 cup sweet chili sauce, to serve

Directions

    Preheat oven to 400°F. Line a baking dish with foil.

    Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin. Coat in oil and season. Place, skin-side up, on a wire rack in the baking dish. Bake for 20-25 mins, until browned and crisp. Turn over and sprinkle with cheese.

    Increase oven to 425°F. Bake potato skins for another 4-5 mins, until cheese melts.

    Meanwhile, to make the salsa, combine all salsa ingredients. Set aside.

    Combine sour cream and chili sauce in a bowl. Set aside.

    Serve potato skins with salsa and sour cream mixture.
