  • 4 Tbsp. chopped onion
  • 3 Tbsp. melted butter
  • 1 c. milk
  • 2 Tbsp. flour
  • salt and pepper to taste
  • 2 eggs, separated
  • 3 c. leftover, mashed potatoes

Directions

    Brown onion in butter.

    Add flour and then milk.

    Add egg yolks and sauce to potatoes; mix well, then fold in beaten egg whites.

    Bake in a greased dish in oven about 25 or 30 minutes at 350°.
