  • 2 medium size potatoes, peeled and diced
  • 1/2 c. water
  • 1 tsp. chicken bouillon granules
  • 2 green onions and tops, sliced
  • 1/2 stalk celery, diced
  • 1 small carrot, peeled and diced
  • 1 Tbsp. margarine
  • 1 tsp. minced parsley
  • 1 c. milk
  • salt and pepper

Directions

    Cook potatoes in water with chicken bouillon, onions, celery and carrot until tender.

    Do not drain.

    Mash with a potato masher.

    Add margarine, parsley, milk, salt and pepper.

    Heat thoroughly.
