Potato Soup

Ingredients

  • 5 to 6 medium potatoes, peeled and cubed
  • 5 c. water
  • 2 beef bouillon cubes
  • 1 large onion, chopped
  • 1 1/2 to 2 c. ham, diced (optional)
  • 1 Tbsp. butter or margarine
  • 2 c. milk

Directions

    In a large stockpot or Dutch oven, combine potatoes, water, bouillon cubes and onion.

    Bring to a boil.

    Cover; reduce heat and simmer 20 to 30 minutes until potatoes are very tender. Remove from heat.

    Do not drain.

    Mash potato mixture.

    Add ham, butter and milk, blending well.

    Return to heat and cook over low heat until heated through.

    Makes 8 servings.
