Ingredients

  • 1 Tbsp. butter
  • 1 onion, chopped
  • 2 to 3 stalks celery, diced
  • 1 carrot, grated
  • 5 to 6 potatoes, diced
  • 6 to 8 c. water
  • 2 to 3 Tbsp. chicken bouillon
  • peppercorns
  • 1 bay leaf
  • 2 c. milk, cream or half and half or combination

Directions

    Saute onion and celery in butter.

    Bring potatoes and water to boil.
  3. 3
    Add onion, celery, carrot, bouillon and a steeper with peppercorns and a bay leaf in it.

    Simmer until potatoes are done. Remove steeper.

    Add milk.

    Serve hot.
