- 4 c. cubed potatoes
- 2 cans chicken broth
- 1 c. thinly sliced celery
- 1 c. chopped carrots
- 1/2 c. chopped onions
- 2 Tbsp. parsley
- 1/8 tsp. pepper
- 3 1/2 c. milk
- 1/2 c. milk, mixed with 3 Tbsp. flour
- 2 Tbsp. margarine
Directions

1Combine all ingredients up to and including pepper in a large pot.

2Bring to a boil.

3Reduce heat; cover and simmer until veggies are tender (15 to 20 minutes).

4Add milk; heat until milk is hot.

5Blend flour and 1/2 cup milk; stir into soup.

6Cook, stirring constantly, until thickened.

7Add margarine and serve.
