- 6 c. diced potatoes
- 1/2 c. sliced carrots
- 6 slices bacon
- 1 c. chopped onion
- 1 c. diced celery
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. half and half
- 2 c. milk
- shredded cheese
- parsley
Directions

1Cook potatoes and carrots until tender in small amount of water.

2Fry bacon until crisp and crumble.

3Save 2 tablespoons bacon fat and saute onion and celery.

4Combine onion, celery, salt, pepper and crumbled bacon.

5Add to potatoes.

6Add half and half and milk.

7Simmer 30 minutes.

8Sprinkle cheese and parsley on before serving.
