Ingredients
- 6 medium potatoes, peeled and sliced
- 2 carrots, diced
- 6 small stalks celery, diced
- 2 qt. water
- 1 chopped onion (medium)
- 6 Tbsp. butter or margarine
- 6 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. milk
Directions

1In large pot, cook potatoes, carrots and celery in water until tender.

2Drain and save liquid.

3Set vegetables aside.

4In the same pot, saute onion in butter or margarine until soft.

5Stir in flour, salt and pepper. Gradually add milk, stirring constantly, until thickened.

6Gently stir in cooked vegetables.

7Add 1 cup or more of reserved cooking liquid until soup is desired consistency.
