  • 6 medium potatoes
  • 1 qt. chicken broth
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1 Tbsp. parsley flakes or 1 Tbsp. celery flakes
  • salt and pepper to taste
  • 2 Tbsp. butter
  • chopped chives

    potatoes in bite-size pieces. Combine all other

    ingredients in soup pot with exception of chopped chives. Simmer

    slowly

    for 1 hour or until potatoes are done and

    be mashed

    lightly

    with

    spoon or potato masher to thicken

    soup. Serve

    in individual bowls.

    Just before serving, sprinkle with chopped chives.
