  • 6 medium potatoes
  • 3 small onions
  • 2 oz. butter or margarine
  • 4 to 5 c. chicken broth (College Inn)
  • salt and pepper
  • 1/2 c. half and half (coffee cream)
  • pinch of nutmeg
  • 1 to 2 Tbsp. fresh parsley or chives

Directions

    Peel and slice potatoes and onions.

    Put in heavy pan with butter or margarine, broth, salt and pepper.

    Simmer until potatoes are soft.

    Whisk until it becomes thick and potatoes show no lumps.

    Add half and half, salt, pepper and nutmeg.

    Stir in the parsley or chives.

    Reheat.
