- 6 medium potatoes
- 3 small onions
- 2 oz. butter or margarine
- 4 to 5 c. chicken broth (College Inn)
- salt and pepper
- 1/2 c. half and half (coffee cream)
- pinch of nutmeg
- 1 to 2 Tbsp. fresh parsley or chives
Directions

1Peel and slice potatoes and onions.

2Put in heavy pan with butter or margarine, broth, salt and pepper.

3Simmer until potatoes are soft.

4Whisk until it becomes thick and potatoes show no lumps.

5Add half and half, salt, pepper and nutmeg.

6Stir in the parsley or chives.

7Reheat.
