Potato Soup

Ingredients

  • 6 to 7 potatoes
  • 1/2 tsp. tarragon
  • 1 tsp. parsley (dried)
  • salt and pepper
  • Mozzarella cheese, cut into small cubes
  • 1 large onion
  • 1/2 tsp. basil
  • pinch of sage
  • approximately 1 qt. milk

Directions

    Peel potatoes and cut into pieces.

    Dice onion.
  3. 3
    Put potatoes and onion into a large pan; just barely cover with water and simmer until very soft.

    Drain and mash by hand.

    There should still be small lumps.

    Put back into pan and cover with milk until very fluid and soup consistency.

    Add herbs, salt and pepper to taste.

    Heat over very low heat, just until slightly bubbling. Pour over cheese cubes in bowl and serve with crackers.
