  • 6 apples, prepared for baking
  • 1 1/2 c. mashed sweet potatoes
  • 1/3 c. cream
  • 1 egg yolk, slightly beaten
  • 1 egg white, stiffly beaten

Directions

    Mix together mashed sweet potatoes, cream and egg yolk.

    Add stiffly beaten egg white.

    Fill apples with this mixture.

    Place in pan with a little water and bake at 350° about 45 minutes or until apples are tender.
