- 1 c. onion
- 1/2 c. celery
- 1/4 c. butter
- 1/4 c. flour
- 2 1/2 c. milk
- 2 Tbsp. chopped parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. shredded Cheddar cheese
- 4 c. cooked, cubed potatoes
- 4 hard-boiled eggs, sliced
- 3 c. cubed ham (optional)
Directions

1Cook onion and celery in butter until soft.

2Stir in flour. Add milk and cook, stirring until mixture boils and is thickened. Stir in parsley, salt, pepper and 1 cup cheese.

3Combine potatoes, eggs and ham in 3-quart casserole.

4Pour sauce over potatoes and eggs; mix.

5Top with remaining cheese.

6Bake in 350° oven for 35 minutes.
