- 8 to 10 small new potatoes
- 1/4 c. butter, melted
- 2 Tbsp. green onions or chives, chopped
- 1/2 lb. mushrooms, chopped
- 1 c. meat stock
- 2 egg yolks
- 1 tsp. lemon juice
- salt and pepper
Directions

1Cook potatoes in jackets until tender.

2Drain and dry.

3Place in a casserole, adding butter and chopped onion.

4Beat egg yolks and add lemon juice, mushrooms and meat stock.

5Season with salt and pepper.

6Pour over potatoes in casserole.

7Bake, uncovered, in preheated 350° oven for 30 to 40 minutes.
