- 1 bag of red potatoes
- 1 bunch fresh oregano
- 1/4 cup vegetable oil
- 1 drizzle olive oil (optional)
- 1 salt and pepper
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1 zest of two lemons
- 1 squeeze of lemon juice
Directions

1Cut potatoes into fourths.

2Toss in vegetable oil.

3Place on roasting pan.

4Season with dried spices.

5Salt and pepper.

6Roast at 350 for approximately 35 minutes or until potatoes are caramelized and fork tender.

7Shaking the pan quickly to toss the potatoes a few times during cooking makes for even caramelization.

8Toss with lemon juice and olive oil if desired.

9Toss with fresh oregano.

10Garnish with lemon zest.
