- 6 to 8 red potatoes, peeled and quartered
- 1 stick margarine
- 1/2 c. flour
- 2/3 c. Parmesan cheese
- 1/4 tsp. salt
- dash of basil
Directions

1Soak potatoes in cold water for 20 minutes.

2Drain potatoes and shake in paper bag with flour, Parmesan cheese, salt and basil. Melt margarine in 9 x 13-inch pan.

3Place potatoes in pan and bake for 30 minutes at 450° or until done.

4Turn once to coat with margarine while baking.
