Potatoes With Balsamic Vinegar

- 2 lbs all-purpose potatoes, such as Yukon gold
- 2 tablespoons olive oil
- 1 large red onion, chopped
- 2 tablespoons water
- salt
- freshly ground black pepper
- 2 tablespoons balsamic vinegar
Directions

1Scrub the potatoes with a brush under cold running water; peel them if desired.

2Cut the potatoes into halves or quarters if large.

3Heat the oil in a saucepan over medium heat; add in the potatoes, onion, water, and salt and pepper to taste.

4Cover the pan and decrease the heat to low; cook 20 minutes or until the potatoes are tender.

5Uncover the pan and stir in the vinegar; cook until most of the liquid evaporates, about 5 minutes.

6Serve hot or at room temperature.
