  • 2 lbs all-purpose potatoes, such as Yukon gold
  • 2 tablespoons olive oil
  • 1 large red onion, chopped
  • 2 tablespoons water
  • salt
  • freshly ground black pepper
  • 2 tablespoons balsamic vinegar

Directions

    Scrub the potatoes with a brush under cold running water; peel them if desired.

    Cut the potatoes into halves or quarters if large.

    Heat the oil in a saucepan over medium heat; add in the potatoes, onion, water, and salt and pepper to taste.

    Cover the pan and decrease the heat to low; cook 20 minutes or until the potatoes are tender.

    Uncover the pan and stir in the vinegar; cook until most of the liquid evaporates, about 5 minutes.

    Serve hot or at room temperature.
