  • 1 skinless chicken
  • 3 tablespoons oil
  • 2 slices bacon, diced
  • 1 onion, finely chopped
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 4 tomatoes
  • 2 garlic cloves
  • 1/3 cup chicken stock
  • 1 bay leaf
  • 1 sprig thyme
  • 1 sprig parsley
  • 1/2 cup cream
  • 2 dashes Accent seasoning
  • salt
  • pepper

Directions

    Brown the chicken in the oil, then remove from skillet and keep warm.

    In the same skillet, fry the bacon, onions, garlic, peppers. Cook until slightly softened.

    Add tomatoes, chicken stock, bay leaf, thyme and Accent.

    Put chicken in this mixture in pieces, cover and cook for 30 minutes.

    Remove the chicken pieces to serving dish. Reduce the sauce slightly and add cream and parsley. Spoon sauce over the chicken and servie. Rice is a good accompaniment.
