- 1 lb. sweet butter
- 2 2/3 c. sugar
- 3 1/2 c. sifted flour (plain)
- 8 eggs
- 8 Tbsp. coffee cream
- 1 tsp. vanilla
Directions

1Separate the eggs.

2Whip the egg whites and add 8 tablespoons of sugar while beating.

3When finished, place in refrigerator while rest of cake is being mixed.

4Cream the butter and add gradually the rest of the sugar.

5Whip until light.

6Add egg yolks, about 2 at a time, beating well after each addition.

7Add flour and cream a little at a time.

8Whip until the mixture is as light as possible on low speed.

9With mixer at low speed, whip in the egg whites only long enough to mix well.

10Pour batter into a lightly greased tube pan 10 inches in diameter and 4 inches deep. Bake for 1 hour and 25 minutes at 300°.
