- 1 lb. butter, softened
- 1 lb. sugar (2 1/2 c.)
- 1 lb. sifted flour (4 c.)
- 9 eggs
- 1 Tbsp. lemon juice
- 1 Tbsp. grated lemon rind (optional)
Directions

1Preheat oven to 350°.

2Grease tube pan.

3Cream the butter, adding sugar gradually.

4Beat until mixture is light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add flour; blend until thoroughly mixed.

5Add lemon juice and rind.

6Pour batter into prepared pan.

7Bake for 1 hour and 15 minutes.

8Turn cake out onto cooling rack and cool to room temperature.
