- 2/3 c. shortening
- 1 1/4 c. sugar
- 2/3 c. milk
- 1 tsp. lemon extract
- 2 c. sifted flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- 3 eggs
Directions

1Preheat oven to 325°.

2Grease and flour loaf pan.

3Cream shortening and sugar until light and fluffy.

4Add milk and lemon extract; blend.

5Sift dry ingredients.

6Add to creamed mixture. Beat until smooth.

7Add eggs, one at a time, beating well after each addition.

8Beat entire mixture well before pouring into well-greased loaf pan.

9Bake for 75 to 80 minutes.

10Makes 1 pound cake.

11Frost or sprinkle with powdered sugar or serve plain.
