  • 1 chicken, cleaned and cut up into serving pieces
  • 1 medium size onion, chopped
  • 1 head garlic, separated into cloves
  • 1 large can hominy (Juanita brand)
  • chili California (for mild heat or chili arbor for stronger heat) to taste
  • oregano (as needed)

Directions

    In a big pot, put chicken and water; enough to cover the chicken. Add half of the onion and garlic. Bring to a boil. Reduce heat to medium and continue to cook until halfway cooked. Add hominy and continue cooking until both chicken and hominy are tender.
