Directions

1Preheat oven to 235°.

2Season ribeye with seasoning salt, pepper and kosher salt.

3Place ribeye on roasting rack.

4Leave airspace between rack and drip pan.

5Load the oven with the ribeye and then turn oven down to 225°.

6Cook for 3 hours, until internal temperature reaches 140° for medium-rare.

7Turn oven down to 150° and hold until serving.

8Serve with au jus.
