- 8 bacon strips, cut up
- 1 small onion, chopped
- 1 1/2 c. 2 c. leftover mashed potatoes
- 1 can cream of chicken soup
- 1 to 2 cans milk
- 1/2 tsp. salt
- 2 Tbsp. chopped parsley
- dash of pepper
Directions

1In small frying pan, brown bacon until crisp.

2Remove and drain on paper towel.

3Add onion to drippings in pan and saute 2 to 3 minutes.

4Drain fat off.

5Meanwhile, in 3-quart saucepan, mix cold potatoes and soup until smooth.

6Add milk gradually, stirring constantly, to desired consistency over medium heat.

7Add bacon and onions.

8Season with salt, pepper and parsley.
