- 12 Black tiger shrimp
- 1 dash Salt
- 1 dash Cooking sake
- 1 Cake flour
- 1 Egg
- 1 Panko
Directions

1Peel the shrimp, and cut off the tips of the tail.

2This prevents the oil from spitting when fried.

3Take the vein out with a toothpick.

4Prepare the shrimp in the salt and cooking sake.

5Make several small cuts in the stomach (inner curve) side of the shrimp.

6This prevents shrinking or curling up.

7Coat with cake flour.

8Dip in beaten egg.

9Coat with panko.

10Put on a generous amount, and shake off any excess.

11Deep fry in 320F/160C oil.

12Drain the oil and serve.
