- 1 cup risotto rice (Arborio rice)
- 1 1/2 tablespoons butter
- 2 1/2 tablespoons basil, fresh,chopped
- 6 ounces provolone cheese, grated
- salt and pepper
Directions

1Bring a medium saucepan of water to a boil.

2Add the rice.

3Reduce the heat and cook until tender (about 20 minutes).

4Drain.

5Return to the pan and toss in the remaining ingredients.

6Mix well.
