Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 1 c. chopped pitted prunes
  • 1 c. chopped walnuts
  • 3/4 c. vegetable oil
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 1/2 tsp. soda
  • 1 c. buttermilk

Directions

    Mix together flour, sugar, spices, prunes and walnuts.

    Set aside.

    Mix oil, eggs and vanilla.

    Dissolve baking soda in buttermilk.

    Pour all liquid ingredients over dry ingredients. Stir until just blended.

    Spoon into muffin cups.

    Makes 16 to 18 muffins.
