Pulled Pork Chimichangas

Ingredients

  • 2 1/2 cup left over pulled pork or store bought pulled pork (like lloyds brand)
  • 1 1/4 cup white or brown rice,cooked
  • 1 cup canned corn (or frozen defrosted)
  • 2 1/2 cup shredded cheddar
  • 5 burrito sized tortillas
  • 2 tbsp canola oil

Directions

    Heat a large frying pan with the canola oil while you prepare the chimichangas.

    Spoon 1/2 cup of pulled pork down the center of each tortilla.
  3. 3
    Top with 1/4 of rice.
  4. 4
    Next top with some corn and 1/2 c of the shredded cheese.

    Fold the tortilla like you would a burrito.

    Fry the seam side down first until golden then flip and fry the other side.
