  • 2 eggs
  • 1 c. oil
  • 4 c. diced apples (2 large)
  • 1 c. nuts
  • 2 1/2 c. sifted flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • pinch of salt
  • 1 tsp. vanilla
  • 1 (6 oz.) butterscotch bits

Directions

    Mix first 3 ingredients.

    Sift dry ingredients together, then add to the first mixture.

    Add vanilla, apples and nuts.

    Put into a greased 13 x 9 x 2-inch pan; sprinkle top with butterscotch bits before baking in a 350° oven for about 45 to 50 minutes.
