- 1 chicken, cut into quarters
- lite salt and pepper
- 4 Tbsp. margarine or oil
- 1 c. fresh mushrooms (small, whole ones)
- 1 can artichoke hearts (14 oz. can)
- 1 can low-sodium asparagus soup (10 3/4 oz.)
- 1 c. fat-free sour cream
- 1/2 c. white wine
- 2 sprigs parsley, finely chopped
Directions

1Rub the chicken pieces with seasonings, then brown in margarine.

2Put in a shallow dish with the mushrooms and drained artichokes.

3Mix the soup, sour cream and wine with the chicken drippings and pour over chicken.

4Bake in a 350° oven for 1 hour and 30 minutes, basting occasionally.

5Garnish with the parsley.
