Ingredients

  • 2 c. all-purpose flour, sifted
  • 1/2 tsp. cinnamon, ginger and salt
  • 1 Tbsp. wheat germ
  • 1 1/2 c. sugar
  • 1 c. canned pumpkin
  • 1/2 c. vegetable oil
  • 2 eggs
  • 3 Tbsp. molasses
  • 1/2 c. water, raisins, chopped nuts

Directions

    In a medium bowl, sift dry ingredients (first 6).

    Beat sugar, pumpkin, oil, eggs and molasses.

    Blend in the dry ingredients; mix well.

    Add water; fold in raisins (and nuts, optional).

    Turn into greased 9 x 5 x 3-inch loaf pan.

    Bake at 350° for 65 minutes or until center springs back.

    Cool on wire rack 10 minutes. Remove.

    Cool to room temperature.
