Ingredients

  • 1 c. light brown sugar, firmly packed
  • 1/2 c. white sugar
  • 1 c. cooked or canned pumpkin
  • 1/2 tsp. each: salt, nutmeg and cinnamon
  • 1/4 tsp. ginger
  • 1/2 c. chopped nuts
  • 1/2 c. salad oil
  • 2 eggs
  • 1 tsp. soda
  • 2 c. flour
  • 1 c. raisins (I use 1/2 c.)

Directions

    Combine sugars, pumpkin, oil and eggs.

    Blend well.

    Add spices and flour.

    Mix well.

    Stir in raisins and nuts.

    Bake in greased or foil-lined loaf pan at 350° for 65 to 75 minutes or until done.
