  • 3 1/2 c. all-purpose flour
  • 2 1/2 to 3 c. sugar
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 1 1/2 tsp. salt
  • 2 tsp. baking soda
  • 2 c. canned or cooked pumpkin
  • 4 eggs
  • 1 c. vegetable oil
  • 1/2 c. plus 1 Tbsp. water

    Preheat oven to 350°.

    Grease and flour two 9 x 5-inch loaf pans.

    Combine flour, sugar, spices, salt and soda.

    Make a well in the center of the mixture and add pumpkin, oil, eggs and water; mix well.

    Pour into prepared pans and bake 1 hour at 350°.
