Ingredients

  • 4 eggs
  • 2/3 c. water
  • 1 can pie pumpkin
  • 3 1/2 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 c. sugar
  • 1 c. vegetable oil
  • 1 c. chopped nuts (optional)

Directions

    Sift all the dry ingredients together.

    Mix in the pumpkin, oil, water and eggs until thoroughly combined.

    Stir in the nuts. Pour into 2 greased and floured loaf pans.

    Bake in a 350° oven for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.

    Cool on a rack in the pans for 10 minutes.

    Then remove from the pans onto a rack to cool completely.
