- 1/2 c. shortening
- 1 1/4 c. sugar
- 2 eggs
- 1 1/4 c. flour (sifted cake flour)
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 ground nutmeg
- 1 c. cooked and cooled fresh pumpkin or 1 c. canned
- 3/4 c. milk
- 1/2 tsp. baking soda
- 1/2 c. chopped nuts
Directions

1In large bowl, cream shortening; add sugar, beating until light and fluffy.

2Beat in eggs.

3In medium bowl, sift flour, baking powder, salt, cinnamon, ginger and nutmeg.

4Combine the pumpkin and milk.

5Stir in baking soda.

6Add flour and pumpkin mixtures alternately to shortening sugar mixture, beating well after each addition.

7Fold in nuts.

8Turn batter in prepared baking pan.

9Bake at 350° for 50 minutes.

10Frost with Raisin-Brown Sugar Icing.
