- 3 eggs
- 1 c. granulated sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1 c. finely chopped nuts
Directions

1Beat eggs on high speed for 5 minutes.

2Gradually beat in sugar.

3Stir in pumpkin and lemon juice.

4Stir flour and dry ingredients together; fold into pumpkin mixture.

5Spread into greased and floured 15 x 10 x 1-inch pan.

6Top with 1 cup finely chopped nuts.

7Bake at 375° for 15 minutes.

8Turn out on towel, sprinkled with 10x sugar.

9Starting at narrow end, roll towel and cake together; let cool.

10Unroll and spread with filling mixture. Roll and chill.
