- 3 egg yolks
- 1/2 c. sugar
- 1 1/4 c. cooked pumpkin
- 1/2 c. milk
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- pinch of salt
- 1 Tbsp. gelatin
- 1/4 c. cold water
- 1/2 c. sugar
- whipped cream
- 3 egg whites, beaten
Directions

1Beat egg yolks slightly.

2Add sugar, pumpkin, milk, ginger, nutmeg, cinnamon and pinch of salt.

3Cook until thick in double boiler.

4Soften gelatin in cold water.

5Add to hot mixture.

6Cool. When it begins to thicken, fold in beaten egg whites to which 1/2 cup sugar has been added.

7Pour in baked pie shell and serve with whipped cream.
