- 2 -3 teaspoons coconut oil
- 1 teaspoon ground coriander
- 12 teaspoon mustard seeds
- 1 pinch chili flakes
- 1 cup red lentil
- 4 cups finely diced pumpkin
- 2 inches gingerroot, peeled minced
- 1 teaspoon turmeric powder
- 3 12 cups water
- 1 pinch salt
- 200 ml coconut milk
Directions

1Place a large pot over medium heat.

2Heat some olive oil.

3Add the ground coriander, mustard seeds and chili flakes.

4Wait for the mustard seeds to pop.

5Add lentils, diced pumpkin, ginger, tumeric and salt.

6Stir a bit just to combine with the oil and spices.

7Add the water and coconut milk.

8Stir and bring to a boil.

9Cook for 25-30 minutes til it's creamy and delicious.
