Pumpkin Doughnuts

Ingredients

  • 3 Tbsp. yeast
  • 1 tsp. sugar
  • 1/4 c. water
  • 1 qt. scalded milk
  • 1 c. lard or cooking oil
  • 1 c. sugar
  • 2 c. mashed pumpkin
  • 2 eggs
  • 2 tsp. salt
  • 11 1/2 c. flour

Directions

    Combine yeast and sugar and dissolve in 1/4 cup water.

    Mix scalded milk, lard or cooking oil, sugar and mashed pumpkin. Pumpkins should have about the same consistency as mashed potatoes. Mix all together and cool.

    Add eggs, salt and flour.

    Put in large greased bowl and let rise until double in size.

    Punch down and let rise again.

    Roll out and cut with doughnut cutter.

    Deep fry. Makes 80 doughnuts.
