Ingredients
- 3 Tbsp. yeast
- 1 tsp. sugar
- 1/4 c. water
- 1 qt. scalded milk
- 1 c. lard or cooking oil
- 1 c. sugar
- 2 c. mashed pumpkin
- 2 eggs
- 2 tsp. salt
- 11 1/2 c. flour
Directions

1Combine yeast and sugar and dissolve in 1/4 cup water.

2Mix scalded milk, lard or cooking oil, sugar and mashed pumpkin. Pumpkins should have about the same consistency as mashed potatoes. Mix all together and cool.

3Add eggs, salt and flour.

4Put in large greased bowl and let rise until double in size.

5Punch down and let rise again.

6Roll out and cut with doughnut cutter.

7Deep fry. Makes 80 doughnuts.
